Xi'an

Xi'an would be worth visiting even without the Terracotta Warriors. The 14th-century city wall is one of the best-preserved in China — rent a bike and ride the full 14km loop at sunset. The Muslim Quarter gets dismissed as touristy, but the back lanes behind the main strip are where the city's Hui community has been cooking the same lamb skewers for generations.
